Apple cider vinegar replaces the minuscule wine and increased salt used in prepared dijons. Our Stone Ground Dijon has a “bite” that is so French and not found in the lesser dijons.

The mustard seeds are cracked and ground to a medium particle which blends magnificiently with the apple cider vinegar to create the continental taste of mustard without the overwhelming burn of distilled vinegar.

- The name Dijon refers to a recipe and not the city or an area of France.
- Dijon is frequently mentioned for use in recipes because yellow mustard breaks down in the cooking process.
- Dijon mustard originated when verjuice, the acidic “green” juice of not-quite-ripe grapes was substituted for the harsh vinegar used in traditional mustard recipes of the 1800’s.
- The Romans mixed unfermented grape juice, known as “must,” with ground mustard seeds to make “burning must” which in Latin is “mustum ardens” – “mustard”.
